O’Doughs New Bagel Thins

My friends at O’Doughs sent me their new Bagel Thins a while back before I left for Switzerland and I have been meaning to review them for a while.  I did however, want to first eat my way through each variety before reviewing them.

I received all of their flavors: Original (Plain); Sprouted Whole Gain Flax; and Apple Cranberry.  They arrived perfectly frozen so I was able to toss them right into my freezer.  Perhaps the first thing you will notice is that these are 100 calories per bagel thin.  No, that is not a typo – they are indeed all 100 calories per thin.  This alone intrigued me beyond belief because those of you that love gluten-free breads, rolls, and bagels know that they more often than not come with a proverbial side of calories.  They also just happen to be Non-GMO, Kosher, and preservative-free – nice!  Okay, so these are 100 calories but how do they taste?

Being a bagel purist, I went straight for the Plain variety first.  Refreshing these bagels thins couldn’t be easier – you can pop them straight into your toaster from the freezer or let them thaw a bit before toasting.  Either way they take very little time to prep.  The plain variety is everything you want in a bagel – just slightly chewy even when the bagel is toasted – which is exactly what I look for in a bagel (thin or otherwise).  At first bite you immediately get the rich doughy flavor you want in a bagel with the distinct hint of sweetness , that, in my opinion, makes a bagel perfect.  Simply buttered with a schmear of jam made this variety one of my favorite morning treats.

Next up was the Spouted Whole Grain Flax Seed.  Now, I have to be honest, I am not nor have I ever been a fan of flax seeds in any shape or form.  There is something about the smell and flavor that I have always found off-putting – just a personal preference of mine.  This bagel thin flavor was actually the first flaxy bread product I have been able to eat.  Yes, there was still the slight olfactory note of flax but when toasted it seemed to dissipate to far more tolerable levels.  This was actually a pretty complex flavor being more on the nutty side thanks to the addition of both poppy and sesame seeds to the mix.  While these are definitely more hearty than the other varieties I still found that they paired well with anything I topped them with from cream cheese to a cheese burger.

The final flavor was the Apple Cranberry.  These made for a nice change as they had the wonderful sweetness from, you guessed it, apples and cranberries with the subtle undertones of raisins, orange, and spicy cinnamon.  These reminded me of my beloved cinnamon raisin bagels back in my pre-Celiac diagnosis days.  Top them with either butter or cream cheese and you are really good to go – their flavor is just robust enough that anything other than a simple topping would likely be a mistake on these.

I am glad that O’Doughs not only made a calorie-sensitive bagels for us Celiacs but made them taste like the real-deal.  Oh, and while these are “thins” don’t think thin-thin.  While they are thin (and one side when split is thinner than the other – important to note when toasting to avoid burning) they have decent body to them so are ideal for a range of ideas from sandwiches to bagel thin pizzas.  You can check out where to find O’Dough’s products on their Web site and a few online gluten-free retailers are carrying the bagel thins as well.

Rudi’s Gluten Free Tortillas

I have been meaning to review these new tortillas from Rudi’s Gluten-Free Bakery since they were kind enough to send them to me a while back.  I received all three of their new varieties: Spinach, Plain, and Fiesta.

Now I was a big wrap person before my diagnosis so was immediately excited at the prospect of once again enjoying a wrap in something other than a plain corn tortilla.  The first thing that I noticed about these tortillas was that they were extremely flexible straight out of the bag – not doubt because of the complex gluten-free flour base that Rudi’s uses that contains: Sorghum, Brown Rice, Corn, Amaranth, Quinoa, Millet, and Teff.  The consistency and texture is really quite unique being a bit thicker than what you would expect in a traditional corn tortilla but having far more flexibility.  Now Rudi’s does recommend quickly heating their tortillas which I also tried and they do become even more pliable – but I do have to confess that I often just ate them right out of the bag.

The Plain variety has a subtle sweetness that I really enjoyed and paired well with everything from eggs in a breakfast wrap to the perfect quesadilla filled with cheese made right in the oven (which made the edges wonderfully crisp – just a little tip there).  The Spinach variety was a real standout with not only the spinach taste you would expect but subtle undertones of cilantro and garlic.  They also paired well with pretty much anything I could think to eat them with but made a particularly good hummus-lined wrap filled with some fresh veggies.  The Fiesta flavor was an interesting mix of the sweetness from the tortilla based elevated with a touch of jalapeno flavor but was not at all overly spicy and was the perfect wrapping vessel for making taco wraps.  A bit of beef, lettuce, tomato, cheese, and a schmear of beans, and some salsa helped take tacos to the next level.

If you are looking for something to help make breakfast, lunch, or dinner a bit more interesting then I would definitely recommend giving these tortillas a try.  They are so easy to use and versatile that the possibilities are pretty much limited only by your imagination.  You can find out where to purchase Rudi’s in your area right on their Web site where you can also learn more about all of their great gluten-free products (I am a sucker for their Cinnamon Raisin bread).

Moni’s Natural Sauces and Dressing

My friends at Moni’s Natural sent me some of their products to review and I could not have been happier.  Those of you from Texas might recognize the name because Moni’s is served at a host of restaurants down in the Lone Star State.  After tasting these products it is no surprise why Moni’s has been a successful family business for decades.  For those of us outside of Texas we need not worry because Moni’s is distributed across the nation and even has on online store to have their products shipped directly to your door.  Being Italian buying jar sauce has long been a no-no and I can hear my mother saying Just make your own – it is so easy.  Well, easy as it might be, let’s face it, most of us are leading hectic lives and whipping up a batch of sauce is not always an option.  I can honestly say that while there are some good sauces out there very few that are exceptional – many claim to taste like Mom’s but I have found few actually deliver.

I sampled Moni’s famous Tomato sauces: Original and Spicy Garlic Marinara (Arrabiata) and their Famous House Vinaigrette.  First up was the Original Marinara which I used as a base for a batch of gluten-free pizza I was making.  Of course I had to sample a small spoonful from the jar before using and let me tell you, this sauce is in a class of its own.  The first thing you notice is that it tastes fresh.  Yes, honest to goodness fresh – which likely stems from Moni’s using all natural ingredients with their ingredient labels reading more like a recipe card than product label.  The Original sauce is the perfect balance of tangy fresh tomatoes with the perfect blend of spices.  The flavor is enhanced by extra virgin olive which helps take the acidic bite out of the tomatoes.

Next up was the Spicy Garlic Marinara.  This was equally as delicious as the Original variety with an added hint of spicy heat.  The rich garlic flavor really came through in this sauce and while this was a spicy blend, it was not overly spicy.  I decided to bake a couple of chicken breasts in this sauce and then topped them with a bit of sliced fresh mozzarella and grated Pecorino Romano cheese for an impromptu baked chicken parmesan.  I used some of the remaining sauce cooked with the chicken to mix with some gluten-free pasta which made for the perfect side dish.

What goes best with great chicken and pasta – why a fresh green salad of course.  Moni’s has you covered in the dressing department as well.  Their Famous House Vinaigrette is an amazing blend of red wine vinegar, tomatoes, oil, and spices.  It is truly a unique flavor combination and I can clearly see why it is indeed famous.

New Product Review, Spindrift Sodas

I was contacted recently to see if I would be interested in sampling Spindrift sodas which are billed as A Fresh Take on Sodas.  Now, I am not a soda drinker, and if I have a couple a year that’s a lot for me – so I was a bit apprehensive at first.  I did a bit of research and Spindrift did indeed appear to be more of an adult-type soda made from real fruit juice.  So then I began to wonder, how would these be different than the other seltzer and juice blends out there?  Well, let me tell you that Spindrift most definitely proves that not all sodas are created equally.  I was lucky enough to sample the entire product portfolio and let me tell you that just when you think you’ve found your favorite, the next flavor combination blows you away.  That being said, I have rarely come across a product where I loved all of the flavors…until now.

The first thing you notice when you pick up a bottle is that there are actually real ingredients that you can recognize on the label – not to mention real squeezed fruit juice and crushed berries (no concentrate here).  The second thing you’ll notice is that when you unscrew each cap there is the Web address for one of the company’s environmental partners that works to preserve water resources.  The third and quite possibly most important thing you’ll notice is the taste.  Now this might be hard to imagine but take everything you have come to expect from a soda, fruit spritzer, or flavored water.  Did you gather up those memories?  Good.  Now throw them away because Spindrift changes everything.

The first flavor that I tried was the Half & Half – half lemonade, half iced tea, complete with ¼ fresh squeezed lemon.  This flavor was a real stand out.  It instantly transported me back to my school days in Germany where a major manufacturer used to make something that tasted exactly like this – a lemony, sparkling ice-tea with lemon.  This flavor was the perfect balance of rich tea paired with the tart, real lemon juice, in a perfectly effervescent base.

Next up was the Cranberry Raspberry.  This one contains sixteen raspberries, nine cranberries, and a hint of fresh squeezed lemon juice.  The sweetness of the raspberries is perfectly balanced with the tart cranberry flavor and the lemon juice helps give it just the right amount of tangy kick.

The Grapefruit flavor was a particular standout because it tasted exactly like it had just been freshly squeezed and made to order – and it should because there’s ¼ of a grapefruit in each bottle.  It was wonderfully sour (in the good grapefruit way) with just a subtle hint of sweetness from the evaporated cane juice.

Mango Orange was the next in line and was a flavor powerhouse.  The fresh orange juice was paired with a rich Alphonso mango purée that really let the mango flavor shine through.  If you like mango that this flavor is definitely for you because I cannot think of another mango soda that even comes close to this one.

Continuing my way through the flavor portfolio, the Blackberry flavor was next.  This one had a crushed blackberry purée that was perfectly tart and sweet as a good blackberry flavor should be.  It was paired with fresh squeezed lemon juice that helped to elevate and bring out the tartness of the berries.

The final flavor was the Lemonade that touts ¾ fresh squeezed lemon and one-third fresh squeezed lime.  This is a terrifically tart lemonade where the fresh squeezed lemon juice is the star.  The subtle hint of lime helps take this lemonade to the next level.

So, Spindrift will definitely change your perception on soda and provides a guilt-free option for when you want to get your soda fix on.  I know that I will definitely be adding these to my beverage repertoires and I am looking forward to trying them as mixers paired with my favorite spirits.

A Little Nip and Tuck

Everyone can use a little refreshing from time to time and GFM is no exception.  You may have noticed that there have been some subtle changes taking place here at GlutenFreeMike.com.  I have had my design company and programmer busy making some minor tweaks to the layout and overall functionality of the site over the past couple of weeks and the end is now on the horizon.

So, you are likely asking What’s changed GFM?  Well, I am glad you asked.  First, and likely the most noticeable is the homepage has been subtly re-designed complete with a new gallery application that will allow for more than one restaurant and one product to be featured – not to mention it looks really cool and saved me a huge amount of time on the back-end.  Just click on any featured item as it scrolls to read the full review.

On the Blog, you can now easily share posts that you like across social media platforms.  The search and indexing functionality (while not visible) have been enhanced and will display in a far more user-friendly and consistent manner.

Some changes are still underway so if you find a little glitch here and there please don’t fret as things are being taken care of.  One note: To access the Product Reviews, Recipes, or Dining Out section please do not access via the pull-down menu from the top navigation as it will only display a few or in some cases single item.  Please access using the main landing pages (just click on the actual main category titles in the top navigation – or just use the hyperlinks provided in the previous sentence :-) ).

My partnership with a major U.S. food and beverage manufacturer, while slightly delayed, is still coming so please stay tuned.  They are perfecting a brand new site to showcase their new gluten-free site and I have provided lots of content I think you are really going to love.

Oskri Product Assortment

While on the road I actually came across these in a travel rest area. I am always amazed when I come across new products in unlikely places. I sampled three products from Oskri: Raisin Granola, Cashew Granola, and their Coconut with Organic Dark Chocolate Bar from their Oskri Organics line.

First up was the Raisin Granola which came in a pretty decent-sized package that was easily a couple of good-sized servings. This mix was not only gluten-free but also dairy-free, vegan, Halal, and Kosher. It was an interesting mix of buckwheat, raisins, sunflower seeds, pecans, date syrup, and chicory root extract. It had a robust texture that packed a serious amount of crunch. Flavor-wise it had a deep roasted flavor that had a subtle sweetness to it. I could easily see the flavor not being everyone’s cup of tea because it was a bit on the over-roasted side and paired with the chicory undertones added a slight level of bitterness.

Next up was the Cashew Granola. This was more subtle in flavor than the raisin variety. This was pretty much the same base as the previous variety with the addition of cashews and cranberries. This variety was a bit more sweet and lacking the slight bitterness of the previous mix paired well with the subtle sweetness of the dried cranberries.

Last up was a Coconut with Dark Organic Dark Chocolate Bar from Oskri’s Organic line. This was my favorite of the trio because it was basically a decadent Mounds-like bar that was lacking of any mystery ingredients. In addition to being gluten-free it is also lactose-free and vegan. It had a great flavor with the subtle coconut paired with the rich, dark organic chocolate. The chocolate itself was mildly sweet and perfect balanced with the coconut.

The Crab Ladies GF Crab Cakes

Many of you who know me are probably wondering how on earth I was able to review a shellfish-based product given my severe allergy to all things shellfish.  Well, I enlisted the help of GFM’s ever fabulous Mom.  My mother is actually one of the best cooks out there.  I know, I know, everyone says that about their Mom – but mine actually made a living at it.  She’s a tough critic and we always joke when we go out to eat with her because some of her favorite comments are things like I would have made it this way  or Why did they use that ingredient

We have traversed the world together and have eaten everywhere from back alleys in China to Al Muntaha high atop the Burj Al Arab together.  She is my travel (and food) partner in crime and I am sure she will not mind me saying that for a 70-something year old she is more active than most people half her age.

So why have her review crab cakes?  Well, she actually has a particular penchant for them.  She is a crab cake aficionado if you will, and has definitely eaten her fair share of them.  She was so excited to give the cakes from The Crab Ladies a try so that I could share a review with you I would have not been able to do otherwise.

The Ladies were so kind and shipped six of their crab cakes to my mother’s front door.  Included was two each of their gluten-free flavors: Original; Artichoke Three Cheese; and Bacon & Gruyere.  What’s nice about the Crab Ladies cakes is that they found a way to make a frozen crab cake that actually tastes fresh – which my mother confirmed.

First up was the Artichoke Three Cheese variety.  My mother followed the heating instructions to the letter and she said the cakes cooked up absolutely amazing.  Finished under the broiler for just a hint of crispiness and they are good to go.  Mom said that they were the perfect portion for one and this flavor was the perfect balance between the wonderfully meaty texture of the crab meat, the woodiness of the artichoke and slight saltiness of the cheese.

The next flavor up was the Bacon & Gruyere variety.  These were also a hit with Mom.  She found the subtle flavor of the bacon to work really well with the muted richness of the Gruyere.  She noted that the onion in this variety really came through without being overpowering.

The final flavor was actually Mom’s favorite – though can you really choose a favorite child?  Ever the culinary purist, she immediately gravitated to the plain variety.  She has long been of the school that a few, simple, fresh ingredients make the most memorable meals.  The plain cake had just the right amount of seasoning and incorporated an impressive range of spices without having any of them overpower each other.  Mom also noted that (as was the case with all the cakes) the bread to crab ration was spot on.  Oftentimes places try to save on the crab meat and tend to bulk up on the fillers – not the case here.  My mother noted that she could easily tell that these were minimally processed and the crab maintained its lump integrity in each cake she sampled.

I have long been a fan of Katz’s Gluten-Free delicious baked goods so when they asked me to sample their new frosted chocolate cupcakes and vanilla rugelach – it took about two seconds for me to say “yes”.  Oh, and they are graciously giving me one of their fabulous sampler packs to give away to one lucky reader.  All you need to do is send me an e-mail and you’ll be entered.  Enter by December 31, 2010.

So now the reviews…

The chocolate frosted cupcakes arrived in perfect condition.  The cupcakes were wonderfully moist and you could really taste the cocoa without being overly sweet.   Each cupcake was enrobed in a right chocolate frosting and half-covered in colored sprinkles.  Even my non-Celiac other half raved about these.

The vanilla rugelach was every bit as good as their other flavors but had a delicate note of vanilla that really allowed the pastry to shine.  The crisp layers of rich buttery pastry are absolutely out of this world and you would never know they are gluten-free – but thankfully they are.  These too are perfectly sweet so you can enjoy the complex flavors of the baked good themselves.

You really cannot go wrong with Katz’s baked goods and if you miss Challah bread – Katz’s is the absolute best I have come across.  So, thanks to my friends at Katz Gluten-Free Bakery for making this holiday season and New Year so sweet.
