Product Review, Wheat Don’t Need You Cookies

Not only do I love it when new, smaller gluten-free companies reach out to me, but when they are local makes it even better.  Wheat Don’t Need You, a cookies company out of Long Island, New York fits the bill perfectly and is making the gluten-free landscape all the sweeter with its Triple Threat cookies.

First, take all your pre-conceived notions of what a cookie should be and toss them aside.  These are decadent cookie bars the likes of which I have not come across since  before my diagnosis going on ten years now.  These are sweet little bars chock-full of chocolate, caramel, and pecans – I mean how can you go wrong?  At first bite you know you are in for something special as you notice the contradiction between soft and slight crispiness coupled with the perfect amount of sweetness rounded off with just a hint of saltiness.  These small bites pack a big flavor punch that even non-Celiacs will fall in love with.  The certified gluten-free oats mixed in with the traditional gluten-free flour mix adds a wonderful texture to the bars that is unlike anything I have come across recently.

The cookie’s creator is a diagnosed Celiac that, like many of us, missed a familiar favorite and decided to take matters, quite literally into her own hands – and boy, I am I glad she did.  If you are on Long Island you can pick up the cookies at several locations or, if you are not local, just order directly from their Web site and have them shipped directly to your front door.

I am so glad to have finally found a cookie bar that tastes like something I remembered from my pre-diagnosis days – not to mention it comes ready to eat.  Head on over to their Web site and check these out for yourself and you will not be disappointed.

So now the reviews…

The chocolate frosted cupcakes arrived in perfect condition.  The cupcakes were wonderfully moist and you could really taste the cocoa without being overly sweet.   Each cupcake was enrobed in a right chocolate frosting and half-covered in colored sprinkles.  Even my non-Celiac other half raved about these.

The vanilla rugelach was every bit as good as their other flavors but had a delicate note of vanilla that really allowed the pastry to shine.  The crisp layers of rich buttery pastry are absolutely out of this world and you would never know they are gluten-free – but thankfully they are.  These too are perfectly sweet so you can enjoy the complex flavors of the baked good themselves.

You really cannot go wrong with Katz’s baked goods and if you miss Challah bread – Katz’s is the absolute best I have come across.  So, thanks to my friends at Katz Gluten-Free Bakery for making this holiday season and New Year so sweet.

I always find it amazing that sometimes I come across great gluten-free find in the most unexpected of places.  I have been traveling to North Carolina pretty frequently to visit family and never thought I would be able to find half of the gluten-free options that I have.  From well-stocked stores to fantastic restaurants to bakeries.  Oh, and I am not talking about the larger metropolitan areas but rather the beautiful Eastern Carolina coast.  So, I have been hitting the area from Wilmington up to New Bern looking for great gluten-free finds when I am in the area.

On my last visit I was contacted by a bakery on the gorgeous Emerald Isle to come and sample their gluten-free products.  Actually this bakery does sugar-, gluten-free, and regular items as well.  So one beautiful morning I headed out to the Isle to check out the Emerald Isle Sugar Shack.  I was  not quite sure what to expect as I had driven on the road it sits on many times but never noticed it but Terri, the owner, was so friendly in our e-mail and Twitter exchanges I knew I had to stop-by – oh, and the fact that she mentioned something about a new gluten-free item they were working on.  I was intrigued and quite frankly hungry that morning so was ready to see what they had to offer.

The E.I. Sugar Shack is in a normal strip mall type building just off the road and from the outside you have no idea what you are in for.  When you walk in you are instantly transported into beach mode.  Fun seating areas and decorations make you feel more like you are in a beachside café than a storefront (the actual water is located behind and across the street from the store).  As promised, Terri was there to greet me and took to the display cases towards the rear of the store.  She told me before I came to be sure to tell her exactly when I would be coming because the gluten-free items sell out fast.

The cases were filled with gluten- and sugar-free options as well as items for those with no allergies.  You almost felt like you were in an old time bakery complete with glass covered domes housing samples for all to try.  Terri explained that everything is made from scratch and she experiments with various ingredients to get items to turn out the way she wants.  I ended up purchasing quite a few items to take with me (and some delicious gifts from Terri) and I will talk about those in a moment but the main event had to be something I had never even heard of before – gluten-free or otherwise – CAKE BALLS. 

Yes, you read it correctly.  Sweet little balls of gluten-free goodness enrobed in chocolate shells.  Think petite fours in a more rounded shape.  Now Terri mentioned she was working on the gluten-free versions of these when we corresponded and I was so eager to give these a try.  She said she came across them while traveling and they had a huge following.  Terri had mini samples on the counter and I did not hold back.  From chocolate to carrot cake to Reese’s, I worked my way through the range and each one was better than the next.  I ordered a bunch of the full-sized options to take with me and enjoy later that evening.  What’s nice about these little treats is that you have a couple (or in my case way more than a couple) and you are not overly full but you feel like you had a real treat.

 

I was so impressed with all of the gluten-free offerings I wanted to be certain to take some samples with me to try out throughout the course of my visit.  I ended up with a slice of decadent chocolate cake topped with a caramel sauce, quite possibly the best carrot cake muffin I have ever had piled high with cream cheese icing, an apple spice muffin (fabulous), two huge chocolate brownies that were so moist they made me weep, a smorgasbord of cake balls, chocolate chip cookies, and a loaf of sandwich bread.  I also picked up some sugar-free shortbread cookies for my mother (who said they were they best she had come across).

What’s nice about the Sugar Shack is that you can pop-in, grab a coffee and sweet treat, sit down and enjoy it or take it with you.  The prices are the lowest I have come across for homemade gluten-free baked goods and you can mix and match until your heart’s content (just want one cupcake, not a problem, a slice of the cake, you got it).  Terri is just so nice you cannot help wanting to stay and chat.  She mentioned she is working on developing a way to provide mail order service for the cake balls in order to find a method that will protect them on their journey.  Be sure to check out there Web site and if you find yourself on or near Emerald Isle be sure to stop by and treat yourself.  Oh, and be sure to say “hello” to Terri for me.

You Will Want To Get Caught With Your Hand In This Cookie Jar

Okay, you all know by know that I have a tremendous sweet tooth and have had a long love affair with chocolate.  Well, my friends at The Gluten Free Cookie Jar Baking Company must have known this as well when two fabulous samples of their decadent brownies arrived at my door. 

I know, you are probably thinking gluten-free brownies are a dime a dozen and even Betty Crocker offers them now.  Well, those other brownies are all well and good, don’t get me wrong but the brownies from Gluten Free Cookie Jar Baking Company were truly something special.  First of all, they are gluten- dairy-  and nut-free.  There are no preservatives or trans fats AND more importantly you can recognize all of the ingredients on the label…nice!

I was lucky enough to try the chocolate chip and mint chocolate chip varieties.  First up the chocolate chip.  The first thing you notice is that the portion sizes are just perfect.  The brownies themselves are super moist but still firm enough to make you feel like you are really indulging in something fabulous and naughty – think rich fudge.  The chocolate brownies were perfectly sweetened and not at all too sweet which is saying something given the fact that each brownie was chock-full of decadent chocolate chips.  I kept these in the refrigerator which made them the perfect cool treat on the hot summer days we have been having.

The mint chocolate chip was very unexpected.  I was never a fan of mint chocolate chip ice cream so was not sure what to expect with these.  Thankfully my friends at Gluten Free Cookie Jar Baking Company are flavor alchemists and managed to make a truly decadent yet at the same time refreshing treat.  The spiciness of the peppermint oil was just perfect.  It was not overpowering in the slightest and made a believer out of me.

My friends at Katz Gluten Free sent me a very nice sampling of some of their sweet treats and savory breads – thank you so very much.  I have to say that I could not have been more pleasantly surprise with some of my old time favorites now available in gluten-free form.  I also love the fact that they are right here in New York State.  Perhaps the most important thing (aside from being absolutely delicious) about their baked goods is they instantly transported me to my pre-Celiac diagnosis days where I indulged in challah and rugelech without care and never in a million years thought I would find delicious gluten-free versions. 

To start with, three words – gluten-free rugelech.  Yes, that is right my friends you read correctly.  I do not think there is anything finer than a good rugelech and let’s face it, even in its gluten-filled form good rugelech can be hard to find.  

Well, my friends, look no further because Katz has, what is in my opinion, the best rugelech out there – gluten or gluten-free.  The pastry is so light and flakey (as rugelech should be) that I was waiting for a reaction because I just could not believe they were gluten-free. 

Let’s begin with the cinnamon variety – think of a delicious cinnamon bun and that is exactly what these tasted like.  Little miniature cinnamon buns that were perfectly sweetened so you could enjoy the rich buttery flakey pastry.  It took all of my strength not to eat the entire package but actually they are very filling which is a good thing because three, okay four, made for the perfect dessert after dinner without leaving you feeling like there was a rock in your stomach.  The chocolate variety was equally as good with rich cocoa notes and just lightly sweetened so as not to take away from the nuttiness of the chocolate.  You can actually taste the ingredients – from the subtle saltiness of the butter to the sweet graininess of the sugar – there are the real deal and absolutely perfectly balanced from a flavor point of view.

Next up were the two varieties of cookies: chocolate dipped and chocolate chip.  After sampling the rugelech there was really no question that the bakers at Katz knew what they were doing so the cookies were no surprise – they were simply delicious.  The chocolate dipped were a simple vanilla butter cookie half-dipped in a rich coating of chocolate.  The cookies themselves were the perfect consistency – being crisp and flaky but without falling apart into pieces at first bite. 

The chocolate chip cookies were again the vanilla butter cookie base but this time with chocolate chips throughout each cookie.  These were also perfectly balanced from a sweetness perspective.  The chocolate was not overpowering and played well against the richness of the base cookie.

Now onto the breads

Yes, there are good gluten free breads out there – we all know that and there’s no surprise there.  However, much like their rugelech Katz is a true standout with their gluten-free sliced challah and challah rolls.  Challah people, challah – I mean it just does not get any better than this.  I could not open the rolls quick enough and was not disappointed.  They are actually airy like challah should be but the taste – oh, the taste!  You first get the subtle hint of sweetness that makes challah so appealing followed by the rich savory notes – rounded out with the ever so subtle bite of the browned crust (which is hard to convey in words – but challah aficionados know exactly what I am talking about).  The sliced bread is equally as good and complex and toasts up a dream.  It is extremely hearty and keeps so well in the freezer and comes back to life without issue.  Perhaps the most shocking about Katz’s challah is that you can eat it right from the package and it tastes like a challah should.

So, to my friends at Katz Gluten-Free, thank you for making the most delicious gluten-free varieties of rugelech and challah – two items I never thought I would be able to enjoy again post-Celiac diagnosis.  To those of you out there reading this – run, don’t walk to their Web site and check out their full product portfolio but if you do not order their rugelech and challah you are truly missing out.

Head To The Canyon, Bakehouse That Is.

The other day I came home to find a parcel from my friends at the Canyon Bakehouse and thanks to everyone’s favorite gluten-free public relations person Gluten Free Dee.  Now we all know that gluten-free bread has long been a sticky wicket among Celiacs.  Yes, there are now quite a few brands doing the gluten-free bread thing but in actuality very few (read I can count on one hand) do it exceptionally.  Well, my friends Canyon Bakehouse out of Loveland, Colorado has just raised the gluten-free bar.

Before I start gushing (oh, and I will be gushing) about their products I want to give you a brief little background about the company.  Canyon Bakehouse is a gluten-free facility that came about when Christi Skow, one of the owners along with her husband Josh and Master Baker Ed Miknevicius, was diagnosed with celiac disease during a routine physical.  She found going gluten-free to be a challenge (we have ALL been there) but really had a hard time finding a great tasting gluten-free bread.  So, the trio set out to make their very own great tasting gluten-free breads…nice.

So on to the products.  I was lucky enough to sample their entire current portfolio of gluten-free breads.  There is San Juan 7-Grain, Mountain White, Cranberry Crunch Muffins, Rosemary and Thyme Focaccia, and rounding out the group…wait for it…Cinnamon Raisin bread, yes Virginia there is a Santa Claus.

I have to first confess that I actually ate my way through all of the products in two days.  No, not the entire packages but I normally tend to eat one variety down and then move on.  Given the diversity of these products I just could not wait and found myself ripping through the packages like a kid at Christmas.

The San Juan 7-Grain bread was out of this world.  I never thought I would see the words 7-grain and gluten-free in such close proximity to one another.  The bread has a fantastic texture and (as with all of the breads) is great straight from the package.  It is moist and the taste is phenomenal.  You get really nice nutty tasting notes with just a hint of sweetness from sugarcane molasses.  Delicious.

Next came the Mountain White variety.  This one is a hard one to get right and many have tried and failed quite miserably.  Not here.  The white is just as moist as the others and has a rich, full-texture.  The flour mix of brown rice, tapioca, sorghum, white rice, and garbanzo is just perfect.  It is sweetened with agave syrup and sugar which provides a really nice homey sweetness to the loaf.

What’s next on the list you ask?  Well the Rosemary and Thyme Focaccia of course.  Now this I found to be most intriguing.  I was really apprehensive about this one but it was so soft in the package I somehow knew it would be delicious.  If you miss focaccia then head on over to their Web site and order this immediately.  This was a real highlight of the tasting and really out of this world.  The focaccia has just the perfect amount of denseness you expect in a focaccia without being a brick of bread.  I ate this one every which was – with cheese untoasted, toasted with cheese, as bruschetta, and all by itself.  The flavors are amazing.  You get the woodsy notes of the rosemary and thyme with just a very subtle hint of the extra virgin olive oil that helps tame the bite of the herbs.  The balance is perfect and I truly cannot say enough about this one.

For dessert there was the Cranberry Crunch muffins.  Now there are other brands out there that claim crunch but Canyon Bakehouse is the only one I know of that delivers.  These muffins while moist and delicious actually have a crunch to them.  These are truly complex muffins with a wonderful flour mix that is paired with poppy seed and tangy (but sweet) cranberries.  Just one of the muffins will easily fill you up, satiating your sweet tooth without leaving you feeling like you just ate a heavy item.

I have saved, in my opinion, the very best for last.  Now, all of the products really stand out among the competitive landscape but one in particular had me over the moon.  The Cinnamon Raisin loaf is the most unexpected (next to the focaccia) and I ate my way through the loaf in record time.  I am not a huge breakfast person but I actually found myself taking slices to the office and toasting it for brekkies.  This moist loaf does not disappoint.  It is chock-full or wonderfully sweet raisins with sunflower seeds scattered throughout and sesame sees on top.  It is the most complex raisin bread I have come across gluten-free or otherwise. Toast it (or not) and spread a little cream cheese love atop and prepare yourself for gluten-free nirvana.  Seriously, it is just that good.

Mixes From The Heartland. Meals Made Simple.

I recently had the opportunity to sample quite a few products from Mixes from the Heartland (thanks Teri) out of Amarillo, Texas.  Here’s a list of the items that were included: Bean Soup Mix; Tex-Mex Pasta Soup Mix; Spinach-N-Chives Dip Mix; Beer Cheese Soup Mix; Cream of Mushroom Soup Mix; Apple Cinnamon Coffee Bars; Corn Bread; and Brown Rice Penne.  Now that’s a lot of sampling but, as always, I happily ate my way through each an every product so that you, my readers are well-informed.  Yes, it took a few weeks to work my way through but I am glad to help provide insights about new companies that cater to us Celiacs.  Oh, and Mixes from the Heartland must know that I am all about convenience because there were really minimal steps involved to turn their pre-packaged dry mixes into warm, satisfying meals, cool dips, and fresh bread.

First up was the Cream of Mushroom soup mix.  Now, I have to confess, I had no idea that each mix made so many portions (I have no sense of proportion – you should see my buying furniture, I think everything fits).  For this mix all you need to add is 2 tablespoons butter and 6 cups milk and whisk it until it dissolves.  It really could not be simpler – okay, you do have to stir it while it is heating, but come on – easy peasy.  In a few minutes (literally) I had a piping hot bowl of soup – and here’s the best part – the taste.  It was rich and creamy (and I used Skim Plus), full of flavor and not too salty (which is always a concern of mine with pre-packaged mixes).  In fact, none of their mixes were even remotely salty but still full of flavor.

For the Tex-Mex Pasta Soup there are actually 3 steps, one of which is adding the mix.  This time you simply brown and drain 1 lb. of sausage (they recommend spicy so who am I to argue).  You then bring 7 cups of beef stock to a boil and toss in the beef, crushed tomatoes (I used plain vs. spicy), and simmer for 15 minutes.  What you are left with is a hearty soup that will warm (and fill you) on the coldest of days – and I can personally attest to that.  It is definitely not a soup for sippers because this is a meal and a fully rounded one at that (well, toss a bit of cheese on the top like I did and you’ll be good to go).

The next soup that made its way into my rotation was a savory Italian Bean soup that was ready to go, again, in minutes.  All that is needed is 8 cups of water, 2 cups of crushed tomatoes, and if you like a bit of ham or sausage thrown in at the end.  I opted to keep my version vegetarian.  This mix was wonderfully spicy (but not overbearing) with three different varieties of beans that made for the perfect legume trifecta.  I have to admit I am not a fan of tomato-based soups but the 2 cups in this recipe was just the right amount so as not to be overly acidic.  The folks at Mixes from the Heartland clearly know what they are doing.

The final soup is one that I no longer see on their site but I hope it will soon be featured again because it was different and fabulous.  It was a Beer Cheese soup mix that was really out of the ordinary in a very, very good way.  I mean what is not to like?  You have gluten-free beer and cheese – need I say more?  Well, I will.  This was clearly not for the dieters among us but it made for a decadent, rich, for lack of a better work cheesy bowl of goodness.  Top it with some gluten-free croutons and you essentially have a meal.

Moving on to the dip category for a bit I decided to make these for nibbles over two evenings.  Again, like all of the mixes I sampled, we are talking no-brainer prep here.  You simply add sour cream or a sour cream and cream cheese blend to a bowl, mix-in the dried dip packet, chill, and voila – perfect dip.  I tried both the Spinach-N-Chives and Cucumber mixes and loved them (as did my non-Celiac other half – who actually raved about all of the products).  What makes these dip mixes so different is that absence of a ridiculous amount of sodium that one tends to find in most soup/dip mixes.  These dips had a much more subtle flavor that was every bit as good as traditional dip mixes without a bunch of fillers, flavorings (mostly artificial), and your daily amount of sodium in a spoonful.  I made one batch with the cream cheese/sour cream blend and one with just sour cream and actually preferred the sour cream alone but that’s just me.  Also, having been impatient and not really chilling a bit of the first batch before indulging – I can safely say that the company is indeed correct in advising you to chill it well before serving.  I actually had some of the leftover dip the next morning and it was so thick I spread it on some gluten-free toast – DELISH.

Somewhere in between my soup and dip extravaganza I sampled some of Mixes from the Heartland’s brown rice penne which cooked up nicely and withstood even the cheesiest of sauces I could top it with.  This leads us to the final and quite possibly most surprising item that I sampled – the Apple Cinnamon Coffee Bar mix.  I have to confess, when I first looked at the package I was thinking, cool, coffee cake but you actually put coffee in the mix to give the it a rich, mocha taste that is truly unique.  The bitter bite of the coffee paired with the sweetness of the apples plays perfectly off on another and creates a harmonious balance of sweet decadent goodness.  Also, being, as I like to call it “baking challenged” these are really foolproof…eggs, cold coffee, butter, mix, bake…done!

I have to be honest and say that I was not sure what to expect with these mixes and was really not holding out much hope – but I was proven completely wrong to judge.  I suppose my previous experiences with store-bought pre-packaged mixes needed to be cast aside (as do yours) because these mixes are unlike anything you will come across sitting next to the Hamburger Helper in the supermarket.  These are wholesome, simple, real ingredient mixes that are fast to whip up and make enough to feed a small army – well, at least a couple of hungry Celiacs.  Do head on over to their site and check out their offerings.  They are currently offering free freight on all orders over $100 and $10 freight on those under $99.  I mean those are some good shipping costs plus they will even throw in a surprise sample with a $25 purchase.  It’s a no-brainer…log-on and give them a try.

The Fantastic Five

The fifth favorite thing in my series goes to Betty Crocker for taking gluten-free to the masses. These mixes are easy and taste like the real thing. It is nice to be able to pick them up in your local market particularly if you need a quick sweet fix. While I have a multitude of GF option here in NYC, I realize that this is not the case in other areas so having a mix that is readily accessible to a wide-range of consumers garners the number five spot on my list.

Having enjoyed the brownies, I decided to give the chocolate chip cookies a go. Like the brownies, the prep was very easy – stir in the wet ingredients, mix well, and spoon onto a greased baking sheet. Again, it was all super easy which I really like.The cookies themselves were, like the brownies, a bit flat. Not sure if this had something to do with the size of my scoops but I did follow the directions exactly as they were written. The texture was light and airy and there was a very good balance between crispy and chewy.

From a taste perspective, they did in fact taste like the “real deal” and even my non-Celiac other half enjoyed them as well. I tend to prefer a more bulked-up cookie so perhaps next time I will try adjusting the scoop size to see if these can be bulked up just a bit.

Betty Crocker Gluten-Free Brownie Mix
I have been meaning to publish my review of Betty Crocker’s GF brownie mix for a while but kept getting sidetracked by other sweet GF offerings. I have to start out by saying that it is fantastic that there is finally a mainstream brand out there that is recognizing (and meeting) the sweet tooth needs of Celiacs — and it can be picked up at your local grocer.I carefully read the instructions which warned that the mixture would be stiffer than usual and they were not kidding. After mixing in the wet ingredients, I got a very through workout trying to stir the batter by hand. The prep could not have been easier though, which was a good thing. I dumped the batter into a greased baking pan and had to work it so that it would spread out evenly. Even then, I noticed that the mix yields a rather thin layer of batter. As it baked in the oven, the kitchen was filled with a nostalgic scent of store bought brownies and this is going to sound strange but it smelled like the Betty Crocker I remembered pre-Celiac.The end result, a rather thin brownie but it was moist and actually really quite nice tasting. Betty Crocker was able to, in my opinion, successfully replicate their famous mix in a GF variety. It definitely has a place in the mass market and will no doubt delight millions of children who can now become part of the Betty Crocker generation. For the gourmet dessert aficionados out there, it is worth a taste and good in a pinch but you will probably want to look elsewhere to get your brownie fix. This company out of Kansas makes truly fool-proof mixes (and I mean they could not be more simple) that are absolutely out of this world. Whatever your taste preference, GFE has something to placate your sweet tooth. I actually still have a few more items to review in their portfolio but will be making them for the coming holiday as GFM will have his in-laws in from Bermuda. These cakes and cookies are so good that no one will ever know they are gluten-free – but you might have a tough time sharing them. Just remember Christmas is all about giving so don’t hesitate serving these to your family our any guests that might show up (either planned or last minute because they whip up in mere minutes). I actually made a batch of their famous Mudslide cookies and brought them into an office fundraising bake sale and they were a real hit. Though in full disclosure I actually bought the entire lot back myself (hey, it was for a good cause) and then distributed the cookies to my very appreciative colleagues. Oh, and Johnita and Maryclara the faces behind the company could not be, well, sweeter. Gluten Free Essentials Decadent Brownie Mix
Continuing with my sampling of Gluten Free Essential’s baking mixes I recently ordered the Decadent Fudge Brownie mix (among others) and it did not disappoint.

First things first, the mixes are just so simple to make you do not need any advanced planning or a weekend to bake any more. In fact, I made the brownies yesterday after a long day at the office. It was a whim, but I felt like something sweet and the oven was already on heating-up dinner so I though Why Not? The brownie mix requires one additional ingredient than some of the cookie mixes I have had before – apple sauce – so make sure you have some on hand when these arrive.

So, I melted one stick of butter, combined it with some apple sauce and two eggs, mixed and voila, Brownies. Well, almost – you do actually have to bake them J. So about 30 minutes later, just as dinner was coming out of the oven so too were the brownies for cooling. What I love about GF Essentials is that their products are decadent but not overly sweet. I actually tweaked this mix just a bit as I has some chocolate chips laying around and decided to add them to the already generous amount in the mix. Hey, I just could not resist! These brownies also rose much more than Betty Crocker’s GF variety (which I like as well) but these were more cake-like in texture.

The end result? A fabulously moist brownie that was rich but light and airy at the same time. I have the remaining brownies chilling in the fridge for a cool treat this evening.

Gluten Free Essentials Vanilla Sugar Cookie Mix
I wanted to make these cookies a week ago but when the mood struck me I realized I was out of eggs. While luxuriating in a day off yesterday, and with my egg coffers replenished, I decided to make these sugar cookies. I have always been a fan of the sugar cookie with its uncomplicated sweet goodness. It makes no pretentions and is quite possibly the most versatile cookie out there.

The mixes from Gluten Free Essentials could really not be easier (see my previous review of their Cocoa Mudslide cookies). You simply dump the mix into a bowl, add 1 stick of melted butter (delicious), and stir in two beaten eggs. Oh, and then you chill it for half an hour. I mean really, does it get any easier. Well, I suppose they could arrive baked but GFE mixes let me pretend that I am actually a baker and know what I am doing. Both mixes I have tried were completely fool proof.

These cookies were delicious. They remained soft after cooling and were not sugary sweet – just the right amount of sweetness to bring out the wonderful vanilla undertones. My non-GF partner also raved about these cookies so if you have a GF/non-GF household these are sure to please even the most hardcore cookie fanatics. Next time I make these I might even get bold and add a few mix-ins or toppings. Somehow the thought of a Hershey’s kiss centered in each cookie seems quite perfect.

Gluten Free Essentials Cocoa Mudslide Cookie Mix
I recently had the opportunity to sample a brand that I had never seen before and was excited to give it a try. As many of you know, I am not a baker by any stretch of the imagination so welcome any product that can help me become just a little more like Betty Crocker. Well Gluten Free Essentials was just the little helper that I needed.

I tried the Cocoa Mudslide Cookie Mix, because quite frankly can you go wrong with chocolate and marshmallows? First, the instructions could not be simpler – all you need to do is add 2 eggs and a stick of melted butter, mix in the cookie mix, and chill for at least a half hour in the refrigerator.

Once the dough was chilled all I had to do was form it into balls, place on a cookie sheet, and put it in the oven to bake. It really was fool proof and prep took no time at all. I had reserved making these on a weekend but now realized that these are so simple, I could easily whip them up after a long day at the office.

The cookies were really delicious. They were moist and full of chocolate chips and marshmallows but at the same time were not overly sweet. Their consistency was really smooth and not at all mealy as is sometimes the case with gluten free mixes. Honestly, you could serve these cookies up to any non-Celiac and they would never be able to tell that they were gluten free. Gluten Free Essentials clearly got their flour mix right (in this case sorghum and rice) and even when you look at the mix in the bag you can tell it is finely milled to an almost powder-like consistency.

One 16 oz. bag yielded 9 rather large cookies which were my personal size preference. If you made more normal-sized cookies you could easily double that amount. I also have Gluten Free Essentials’ sugar cookie mix to sample next and I am definitely looking forward to it – just as soon as I finish these cocoa mudslide treats.

Number 8, Feel Good This Holiday Season With Do Goodie Cookies

Another one from the archives.  Not only were these cookies delicious, they have a fantastic cause behind them.  What better way to get in the holiday spirit than a sweet treat that helps sweeten the lives of others?  Most definitely one of my favorite things.

I tend not to blog about new products, preferring to reserve my reviews for that section on my site.  However, every now and then there are some items that I really want to call a bit of extra attention to.

I was lucky enough to sample a new gluten-free line from a company that actually lives their brand name.  The Greyston Bakery is located just up the road from Gluten Free Mike in Westchester County, New York.  What makes this company so unique is that all of the profits the company takes in go directly to the Greyston Foundation whose mission is to support low-income individuals and families as they forge a path to self-sufficiency and community transformation.  The bakery employs individuals who just need an opportunity to help get their lives on track.  I checked out many of the profiles on their Web site and each story was more inspirational than the next.

I sampled the oatmeal raisin and chocolate chip cookie varieties.  The oatmeal raisin were wonderfully crisp and chock full of sweet moist raisins.  There was a perfect balance between the nuttiness of the oatmeal and sweetness of the raisins.  The chocolate chip were equally as crisp and flakey as their oatmeal counterparts but were filled with sweet chocolate morsels.  Both cookie bases were buttery perfection without being too sugary sweet so as not to distract from the wonderful add-ins.

So the next time you have a hankering for some truly delicious cookies, do as Greyston’s tagline advises and Feed Your Conscience.  What better way to enjoy a sweet gluten-free treat than knowing that your purchase is affecting huge change.
