I was looking for a baking flour to test a new brownie recipe.  I needed an all-purpose type flour and came across this while up in the mountains.  I have had some other Hodgson Mill products in the past so knew the name.  What’s nice about this flour is its versatility.  It is a millet, sorghum, brown rice mix – even better is it is whole grain which helps in the fiber department.  Actually the only other ingredient in the mix is xanthan gum.  So this simple mix makes for a wholesome choice in baking recipes.  I only needed a small amount for my brownies and the mix worked extremely well and I look forward to using it in the future.  It did not have an overpowering flour taste and incorporated well without being gritty or even noticeable in the recipe.
